In our daycare we normally mix a healthy amount of vegetables and fruits to the childrens daily meals. When we encounter a picky season where children avoid the greenies and fruits in their food platter, we try to mix it up by creating cakes, jello or popular food items based on vegetable. For example, brocolli "chicken" nuggets or carrot and kiwi jello is a popular and favorite treat among kids. You can get creative and introduce more greens, all you need is a puree and the patience to experiement and create fun and colorful food creations.
